Research Notes on Whole Grains
A diet consisting of whole grain foods is associated with a lowered risk of developing heart disease or having a stroke. A whole grain means the entire grain seed (the bran, endosperm and germ) is retained in food production. The germ and bran are high in fiber, antioxidants, healthy fats, and numerous vitamins. Additionally, whole grains break down slowly in the digestive tract, providing a steady stream of glucose to keep blood sugar levels stable for hours; this improves alertness, concentration, and memory, as well as being good for diabetics.
