Research Notes on Tofu
Tofu is a highly nutritious, protein-rich food made from the curds of soybean milk. Tofu is a staple in many Asian countries, as well as an important protein source in vegetarian diets. Numerous studies have shown that the soy protein found in tofu can help lower cholesterol, helping to prevent heart disease. Tofu is also rich in tryptophan, which can help boost mood. Called tofu in Japan; in China it is known as doufu.
