Research Notes on Sweet Potatoes
Loaded with beta-carotene -- which the body converts to vitamin A -- and vitamin C, sweet potatoes act as antioxidants to help slow the aging process and reduce the risk of some cancers. Sweet potatoes are also full of fiber, vitamin B-6, vitamin E, folate and potassium. The term "yam" is commonly used to refer to sweet potatoes, although true yams are larger, starchy root vegetables from Africa and Asia that are rarely available in the American market. For the most health benefits, cook sweet potatoes with their skin on.
