Research Notes on Potatoes
Nutritionally, potatoes are best known for their carbohydrate content (approximately 26 grams in a medium potato). In addition to vitamins, minerals and fiber, potatoes also contain an assortment of phytochemicals, such as carotenoids and polyphenols.
