Research Notes on Iron
Almost two-thirds of iron in the body is found in hemoglobin, the protein in red blood cells that carries oxygen to tissues. Good sources of dietary iron include red meat, fish, poultry, lentils, beans, leafy vegetables, tofu, chickpeas, black-eyed peas, potatoes with skin, whole-grain bread, and molasses.
Fast Facts:
- Iron in meat is more easily absorbed than iron in vegetables.
- Iron deficiency is referred to as Anemia.
- Iron deficiency is the most widespread mineral nutritional deficiency.
- All life would cease to exist without iron.
