Research Notes on Healthy Beans and Legumes
Beans and legumes should be included as part of a healthy diet. Legumes are a great source of complex carbohydrates, fiber, protein, and minerals such as magnesium, potassium, and zinc. They are also low in fat. Beans are also packed with antioxidants. The folic acid in legumes is a natural mood booster. Black beans in particular are a good choice. Including beans and legumes in your diet can be as easy as tossing them into your favorite salad.
