Research Notes on Cucumber
Cucumbers are members of the gourd family, along with watermelon, zucchini, pumpkin, and other squash. The flesh of the cucumber is largely made of water, but they are also high in fiber, vitamins and minerals, such as vitamin C, vitamin K and potassium.1 Cucumbers are also used on the skin, particularly fresh slices placed on the eyes to reduce puffiness.
Fast Facts:
- Cucumbers may be eaten raw, cooked, or pickled.
- When selecting cucumbers, look for rich green color and no soft spots.
- The common "slicing cucumbers" are Persian cucumbers and they are often waxed to seal in moisture.2
