Carrots are the highest vegetable source of the pro-vitamin A carotenes. These antioxidants help protect against heart disease and some cancers. The beta-carotene in carrots also helps to protect vision, especially night vision. Look for bright orange carrots for the most beta-carotene, and carrots are healthy both raw and cooked.
