Carotenoids are organic pigments that occur in foods. They are the phytonutrients like beta-carotene, alpha-carotene, gamma-carotene, lycopene, lutein, and astaxanthin that are found in vegetables and fruits and act as antioxidants and may help fight diseases like heart disease, macular degeneration, and some cancers.
