Research Notes on Broccoli
Broccoli is rich in vitamins, minerals and fiber and contains phytonutrients that may help prevent diseases like cancer, heart disease and diabetes. Broccoli florets that are darker in color contain more vitamin C and beta-carotene than those that are lighter in color. To get the most nutrition from broccoli, eat it raw or lightly cooked, such as quickly steamed or even quickly microwaved in very little water.
