Beta-carotene belongs to a group of chemicals called carotenoids. Beta-carotene is turned into vitamin A in the body. The immune system does not function as well with low levels of Vitamin A. Foods containing beta-carotene include pumpkin, cantaloupe, apricots, squash, sweet potatoes, carrots, spinach and kale.
