Artichokes are a great source of magnesium and fiber. Vitamin A, vitamin C, folic acid, potassium, and riboflavin are also present in good quantities. The fresher the artichoke the better, as fresh artichokes contain a carbohydrate in the form of insulin that is handled by the body differently than other sugars.
